Idol sa Kusina Recipe- CARA BEEF TAPA WITH JAVA RICE AND ATCHARA

Here's Idol sa Kusina Recipe for Episode 115 / Nov. 3,2013- CARA BEEF TAPA WITH JAVA RICE AND ATCHARA.

Cara Beef Tapa
  • 500g carabao meat (sirloin)
  • ½ cup rock salt
Procedure:
1. Season beef with salt and air dry for 5 days. 
2. After 5 days, cut into strips and fry.

Atchara
  • 200g green (raw) papaya, grated into long strands
  • 1 medium carrot
  • 1 large red onion, sliced into thin strips
  • 3 cloves of garlic, thinly sliced
  • 1 large red bell pepper, julienned (sliced into thin strips)
  • 1/4 cup raisins
  • 2 tbs whole peppercorn
  • 1 cup white vinegar
  • 1 cup white sugar
  • 1 1/2 tsp salt and pepper to taste
Procedure:
1. Combine all ingredients and chill for 3 days. Serve.

Java Rice
4 cups cooked rice
1/2 tablespoon annatto powder
1/4 teaspoon turmeric powder
3 tablespoons margarine, melted
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt

Procedure
1. Combine turmeric and annatto powder. Mix well.
2. Put-in garlic powder, onion powder, and salt. Stir until everything is distributed.
3. Pour-in mixture on warm steamed rice. Gently mix so that the rice is coated by the mixture.

Here's Idol sa Kusina Recipe for Episode 43- FRIED CORNED BEEF BALLS. Ingredients: 500g corned beef 6 pcs. eggs 1 pc. white onion 1 clove garlic 4 loaves bread, white part only, soaked in fresh milk ½ cup fresh milk 30g spring onion 30g celery 1 cup rice 100g all-purpose flour 1 tsp. salt 1 tsp. white pepper For garnish: julienne carrots and julienne pumpkin Procedure: 1. Saute onion, garlic, celery. Add corned beef. season with salt and pepper. Set aside. 2. On mixing bowl, add bread loaves, spring onion, beaten egg, all-purpose flour. Combine all together. 3. Form into balls and deep fry in hot oil until golden brown and set aside. 4. Saute white rice in butter. Add beaten egg, turn once until done. 5. Place on plate over top with corned beef balls.
