Kitchen Supestar RECIPES: MARATHON SALMON ROLL Ingredients: 200g fresh salmon cut to strips1 medium zucchini seeded and cut to strips and blanched1 small carrot cut to thin strips and blanched7 pieces loaf bread slices pressed/flattened and crusts removedmayonnaise for spreading Salsa:1 /2 cup chopped roasted bell peppers1 cup peeled, seeded and chopped tomatoes1 small red onion finely chopped1 bunch fresh wansuy choppedjuice and zest of 1 limeSalt and pepper to taste Procedure: Spread some mayo on the flattened bread slices then arrange the salmon, carrots and zucchini on top.Roll them up to wrap the salmon and veggies with the bread and secure with toothpicks.For the salsa, mix all the ingredients in a bowl then season with salt and pepper to taste and serve it with the salmon rolls.
