Which Filipino dish should we promote to finally get that distinct culinary identity abroad? Catch the best adobo, sinigang and lechon in the Philippines. According to Lancelot, I think the main reason why Filipino food isn't as popular as the other nations' dishes is because we Filipinos are too apologetic about our food, and our culture in general. We tend to bend the rules to accommodate the taste buds of other nations instead of making a stand for what we believe and practice. Also the reason why it lacks identity is because whenever represent Filipino dishes abroad they always tend to add ingredients which are not native of the Philippines and adding twists and fusions to cater europe and the americas. I really wish that there will be a chef that would stick to tradition but just make it more beautiful in presentation. Italy for example they always tends to stick to tradition that is why if it is not italian dishes are so popular
