Longganisa Fried Rice
INGREDIENTS:
1 tablespoon olive oil
1 tablespoon minced garlic
5 cups cooked rice
11/2 cups crumbled longganisa, cooked until browned
2 teaspoons vinegar
Salt, to taste
1/2 cup chopped onions
1 cup chopped tomatoes
3 salted eggs, diced
INSTRUCTIONS:
Heat oil in a wok or pan. Add garlic and sauté until fragrant but not brown. Add rice and longganisa. Toss to mix well. Drizzle with vinegar and season to taste.
Transfer to a serving bowl and top with onions, tomatoes, and salted egg.
