HOW TO MAKE PORK CUAPAO

PORK CUAPAO INGREDIENTS AND PROCEDURES.



Ingredients: 

Cuapao bread 
½ kilo Pork liempo/kasim cut into 2 by 3 inches 
2 tbsp Cooking oil
1 pc Laurel leaf
¼ cup Oyster sauce
¼ cup Dark Soy sauce
1 tbsp Chinese five spice
1 tbsp. garlic, chopped
1 tbsp. onion, chopped
2 pcs. star anise
¼ cup Chinese wine


Toppings:
Century egg
Kiam chai (pickled mustard greens)
Chopped peanuts

Procedure: 
1. In a pan, sauté onion garlic, pork in oil. Wait for the pork to brown.
2. Add dark soy sauce, star anise, laurel leaf, Chinese wine. Mix thoroughly and let it simmer covered until the pork is tender.
3. To assemble: fill mantao bread with pork, kiam chai and century eggs, sprinkle with chopped peanuts.

Mantou

½ cup milk, warm
¼ cup water, warm
1 tbsp. dry yeast
2 tbsp vegetable oil
2 ½ cup all purpose flour
¼ cup sugar
1 ½ teaspoon salt
1 ½ teaspoon, baking powder

Procedure:
1. In a bowl, pour warm milk, warm water and dry yeast, mix it together. Add vegetable oil, and mix it as well and set aside.
2. Mix all the dry ingredients on a separate bowl: flour, sugar, salt, and baking powder.
3. Mix the wet mixture on to the dry ingredients to form a dough.
4. Kneed the dough for 5 minutes until elastic. Set aside and let it rest for it rise, covered with dry towel for 45 minutes.
5. After resting the dough, form the dough into a log and roll it using a rolling pin in a thin sheet. When it is this roll the dough again and slice it into eight and let it rest for 15 minutes.
6. Steam the prepared dough for about 10 – 15 minutes.
