Here's Idol sa Kusina- Holy Week Recipe for Episode 85 / March 24- TUNA PAKFRY. Ingredients: 500g tuna tail part Black pepper to taste 1 thumb sized ginger, pounded 4 cloves garlic, pounded 1 red onion, wedged 3 pcs finger chili 4pcs fresh sampaloc or 2 tbsp tamarind paste 1 tsp patis 2 cups water 1 cup cornstarch Oil for deep frying 1/3 cup slurry 1 tbsp soy sauce 3 pcs calamansi 1-2 labuyo, sliced Cilantro for garnish Photo and Recipe creit: Idol sa Kusina Procedure: 1. In a pot, boil water with onion, garlic, ginger, tamarind paste, finger chili, patis and black pepper.  2. Add the tuna and simmer until cooked and tender. 3. Remove tuna and dredge in cornstarch. Season with salt and pepper and deepfry. Set aside. 4. Meanwhile, continue to simmer the tuna broth until reduced, add labuyo, soy sauce and slurry to thicken then add calamansi. Serve sauce with tuna. 5. Garnish with cilantro.

Here's Idol sa Kusina- Holy Week Recipe, Episode 85 / March 24- Cheesy Chili Fish Wonton w/ Red Cabbage Slaw. Ingredients: 400g tilapia fillets, roughly chopped 1 egg beaten 2 sprigs spring onion 1/4 cup carrots, finely diced 1-2 pcs finger chili, chopped 1/4 cup mushroom, chopped 1 pack Cheese slices 1 pack wanton wrappers Oil for deep frying Photo and Recipe credit: Idol sa Kusina Procedure: 1. Place fish in a food processor, pulse and set aside. 2. In a bowl, combine onion, mushrooms, carrots, finger chili, spring onion and fish. 3. Season with salt and pepper. 4. Spoon fish mixture on the center of the wonton wrapper.  5. Top with sliced cheese and fold into triangles and seal edge with beaten eggwash. 6. Heat vegetable oil in a frying pan. Here's Idol sa Kusina- Holy Week Episode Recipe- March 24- Sinaing na Tulingan. Ingredients: 500g small or medium sized tulingan, cleaned and gutted 1/3 cup dried or 1 cup fresh kamias 30g pork fat (sliced into strips) 1/2 cup water 1 tbsp rock salt Ground pepper to taste 2 cloves garlic, crushed 1 red nion sliced 2-3 pcs Finger chili (optional) Photo and Recipe credit: Idol sa Kusina Procedure: 1. Place the pork fat, onions, and half of the kamias at the bottom of the clay pot. 2. Top the tulingan and arrange each piece properly. Season with salt and pepper. 3. Add the remaining kamias and other ingredients over the layer of tulingan. 4. Bring to a boil. And let it simmer for 30 to 45 minutes until the fish is cooked. Garnish with spring onions and serve with rice.

Here's Idol sa Kusina Recipe for Episode 43- FRIED CORNED BEEF BALLS. Ingredients: 500g corned beef 6 pcs. eggs 1 pc. white onion 1 clove garlic 4 loaves bread, white part only, soaked in fresh milk ½ cup fresh milk 30g spring onion 30g celery 1 cup rice 100g all-purpose flour 1 tsp. salt 1 tsp. white pepper For garnish: julienne carrots and julienne pumpkin Procedure: 1. Saute onion, garlic, celery. Add corned beef. season with salt and pepper. Set aside. 2. On mixing bowl, add bread loaves, spring onion, beaten egg, all-purpose flour. Combine all together. 3. Form into balls and deep fry in hot oil until golden brown and set aside. 4. Saute white rice in butter. Add beaten egg, turn once until done. 5. Place on plate over top with corned beef balls.
