Here's Idol sa Kusina Recipe for Episode 56 / Aug. 5- POACHED PRIME RIBS AND HERBED MASHED SWEET CAMOTE.
Ingredients:
1.5-2 k prime rib
1/3 cup yellow mustard
salt and pepper to taste
1 pc white onion
1 pc carrot
1 pc celery
Procedure:
1. Tie with butcher's string then season with salt and pepper, and rub with mustard.
2. Have ready roasting pan with mirepoix then place prime rib; and roast until done or around 1½ hours.
For Herbed Mashed Camote:
Ingredients:
1kg sweet potato par-boiled and mashed already
¼ cup butter
1 cup fresh milk
1 tbsp chopped basil
1 tsp salt
1 tsp white pepper
Procedure:
1. Melt buter, add mashed sweet
potato, milk, salt pepper, mixing well and lastly chopped fresh basil. Scoop into the platter, arrange slices of roast beef.
2. Serve on the side with au-jus (gravy sauce)
