Here's Idol sa Kusina Recipe for Episode 57- Aug. 12 CHEF BOY's TANIGUE STEAK.
Ingredients:
1kg. tanguigue steak 150 g. each cut per portion
30g. black olives cut into slices
20g. red bell pepper (small dice cut)
20g. green bell pepper(small dice cut)
¼ cup calamansi juice
10g. capers chopped
20g finely chopped white onion
½ jigger brandy
½ jigger white wine
50 g. butter
1 tsp.salt
1 tsp. white pepper powder
1 pc. dayap or US lemon cut into wedges
1 pc. small tomato, dice cut
1 tbsp. mustard
Procedure:
1. Season with salt, pepper. Brush the tanguigue steak with mustard. ,Pan grill into frying pan,Flambé with brandy, white wine, until done, and set aside.
2. Sauté in sauce pot with olive oil, onion, bell pepper, tomato. Season with salt, pepper. Add butter, calamansi juice, black olives.
3. Place tanguigue steak on plate then pour on top with Mediterranean sauce. Garnish with lemon wedges.
