Here's Taste Buddies Recipe- LASAGNA WITH SPICY WALNUT SPINACH PESTO AND PUMPKIN PUREE.
Ingredients:
Procedure:
1. pre-heat oven at 350F
2. For the pesto sauce, place spinach, basil, walnuts and cayenne pepper in a food processor or blender. Slowly add olive oil and mix until well blended. Set aside.
3. Spread 1/2 cup pumpkin puree in a baking dish and top with a layer of lasagna sheets, followed by a layer of pesto.
4. Repeat the process, ending with the pumpkin puree. Sprinkle with grated mozarella cheese, parmesan, and cottage cheese.
5. Bake in pre-heated over for 20 minutes or until cheese is bubbly.
