Here's Kusina Master Recipe on October 25-FRIDAY Recipe: KABUTE with BANGUS BELLY (PINAIS NA MAY ISDA).
INGREDIENTS:
- 500 grams Kabute Mushroom
- 500 grams Bangus Belly
- 1 kilo Banana Leaves
- 4 pieces Fresh Tomato Slices
- 2 pieces Red Onion cut into round slices
- 1/2 cup Calamansi Juice
- 1 tsp Rock Salt
- 1/2 tsp Crushed Peppercorn
- 2 tbsp Olive Oil

DIRECTIONS:
* Marinate bangus belly in calamansi juice for 30 minutes
* Blanch banana leaves then place kabuti on top of all the vegetables
* Lay the bangus belly in the middle of the banana leaves putting some of the vegetables, spice mixture under the fish and on top of the fish.
* Wrap the fish sealing ends w/ toothpick.
* Grill until banana leaves are charred approximately about 30 minutes.
