Kadalasan, patis o fish sauce lang ang ginagamit natin sa nilaga, pero sinong mag-aakala na marami pa pala tayong pwedeng sawsawan para dito? Pero bago 'yan, gumawa muna tayo ng nilaga with the following ingredients:
- 500g beef shanks, cut into serving parts
- 500g beef tendons
- 2 medium potatoes, peeled and quartered
- 1 small onion, peeled and quartered
- 1 tsp peppercorn
- 1/2 cabbage, cut into wedges
- 80g Baguio beans
- 1 tablespoon fish sauce
- 2 liters water
- salt to taste

Tajore Mansi Dip:
1/8 tbsp tajore, mashed
1/4 cup vinegar
3 tbsp calamansi juice
2 tablespoons ginger, grated
2 tablespoons spring onion, chopped
2 teaspoon sugar
1 teaspoon sesame oil
Ensaladang Talong:
2 eggplants, grilled and skin peeled
2 cloves garlic, minced
2 calamansi
patis to taste
pepper to taste
Fish Sauce:
1/4 cup fish sauce
1 lime, juiced
1/4 tsp lime rind
1 labuyo, chopped
