Here's Idol sa Kusina Recipe Fried Lumpiang Ubod and Veggie Ukoy with Vinegar Dip.
Ingredients for the Fried Lumpiang Ubod:
- 500g ubod (palm heart), cut into thin strips
- 1 chicken breast, boiled and flaked
- 1 head garlic, chopped
- 1 small red onion, chopped
- 1 small white onion, chopped
- 2 tbsps fish sauce
- Salt and pepper to taste
- Lumpia (spring roll) wrappers
- Cooking oil for stir frying
- Cooking oil for deep frying
- cornstarch diluted in water
Ingredients for the Veggie Ukoy:
- 500g squash, julienned or grated
- 150g carrots, grated or thinly sliced
- 2 tbspsgreen onions, thinly sliced
- 150 grams cabbage, thinly sliced
- 125g flour
- 60g cornstarch
- 1 egg, beaten
- 80ml water
- 1 tbsp. fish sauce
- 2 cloves garlic, minced
- Cooking oil for frying
Ingredients for the Vinegar Dip:
- 60 ml white vinegar
- 3 cloves garlic, crushed
- Soy sauce
- Red onions
- Brown sugar
- Siling labuyo
