Lengua Estofado
Ingredients:
- 1 kilo Ox tongue
 - 1 head garlic, minced
 - 1 pc red onion, quartered
 - 1 pc carrot. Chopped
 - 1 stalk celery, chopped with leaves
 - 3 tbsps salt
 - 2 tbsps black pepper
 - Water
 - Cooking oil, for sautéing

 - 1 cup red wine
 - 3 tbsps Worcestershire sauce
 - 1 cup green olives
 - 1 tsp paprika
 - 60 g tomato paste
 - 500 ml tomato sauce
 - 1 liter beef broth
 - Salt to taste
 - Black pepper to taste
 - 2 pcs potatoes, peeled and quartered
 - 1 pc carrots, peeled and quartered
 - Olive oil, for drizzling
