Adobo Boodle Ingredients and Procedure
Ingredients for Adobong Puti:
- 750 g pork belly, cut into 2-inch cubes
- 1 head garlic, minced
- 1 pc red onion, thinly sliced
- 1 cup white vinegar
- 3 cups water
- 3 pcs bay leaves
- 1 tbsp salt
- 1 tsp black peppercorns, crushed
- 1 tsp white sugar
- Cooking oil for sautéing
Ingredients for Adobong Pusit sa Gata:
- 1 kilo baby squid, cleaned and ink reserved
- 4 eads garlic, minced
- ¼ cup soy sauce
- ¼ cup vinegar
- 400 ml coconut cream
- 1 tbsp sprig onion, chopped
- 2 pcs chili finers, seeded and chopped
- ½ tbsp. white sugar
- Cooking oil for sautéing
- Flour for dreding the squid
- Cilantro leaves for garnish
- 1 tbsp garlic, minced and toasted
Ingredients for Adobong Kangkong:
- 100 grams of ground lean pork
- 2 bunches of kangkong (leaves and tender stalks)
- 4 to 6 cloves garlic, peeled and crushed
- 1 onion, peeled and thinly sliced
- 1 bay leaf
- 1/2 teaspoon ground black pepper
- 1/4 c. of vinegar about
- 3 tbsp soy sauce
- 2 tbsp Cooking oil
