Deep Fried Fish and Tofu in Black bean Sauce Ingredients and Procedure.
Ingredients:
- 500 grams Lapu-lapu fillet, sliced in to thick strips.
 - 2 blocks firm tofu, sliced into thick strips
 - 2 cups flour
 - 2 tbsp salt
 - 2 tbsp pepper
 - Oil for deep frying.
 
Ingredients for the sauce:
- 2 tbsp oil
 - 4 stalks, scallions sliced thinly
 - 1 thumb size ginger, peeled and julienned
 - 2 cloves of garlic
 - 1 tsp chili flakes
 - ¼ cup fermented black beans
 - 2 cups chicken stock
 - 2 tbsp cornstarch dissolved in 2 tbsp chicken stock or water
 - Cilantro leaves for garnish
 - Pepper to taste
 - 1 tbsp sesame oil for garnish
