Here's Idol sa Kusina Recipe for Episode 42- EMBUTIDO GANADO. Ingredients: 150 g sinsal, leaf lard 1 ½ kilo lean ground pork 2 cans Vienna sausage, chopped 1 pc. Chorizo de bilbao, chopped 1 pc. small carrot, finely chopped 2 pcs. red bell pepper, roasted and chopped 1 cup grated cheddar cheese 4 pcs. onion, chopped ½ cup evaporated milk ½ cup pickle relish ½ cup raisins, chopped ½ head garlic, chopped 4 pcs. egg, beaten 1 tbsp. ground black pepper 2 tbsp. salt For core filling: 6 pcs. hard-boiled eggs, quartered into wedges 2 cans whole Vienna sausage For steaming: 2 tbsp. vinegar 1 head garlic, crushed 3-5 pcs. bay leaf Procedure: 1. Here's Idol sa Kusina Recipe for Episode 42- MAGIC BREADED PORK CHOPS. Ingredients: ½ kg thinly sliced pork loin or pork chops ½ cup oyster sauce 1 8g Maggi Magic Sarap salt to taste 4 eggs, beaten Japanese breadcrumbs cooking oil for deep-frying For Teriyaki Sauce Combine – ½ cup oyster sauce 1 tbsp grated ginger 1 cup hot water 1 tsp Maggi Magic Sarap 2 tbsp bron sugar Procedure: 1. Marinate pork in oyster sauce, Maggi Magic Sarap and sit for at least 15 minutes. 2. Dip marinated pork in beaten egg then dredge with Japanese breadcrumbs. Repeat procedure to make sure pork is completely coated with breadcrumbs. 3. Heat oil. Fry coated pork for at least 5 minutes on each side or until golden brown. 4. Here's Idol  sa Kusina Recipe for Episode 42- TWICE-FRIED CHICKEN. Ingredients: 1 cup chicken broth 6 cloves garlic, coarsely chopped ¼ cup Hoisin sauce 2 tbsp. chopped fresh ginger 1 ½ tbsp. soy sauce 1 tbsp. honey ¼ tsp. pepper Vegetable oil, for frying 500g chicken drumstick 1 tbsp. sesame seeds, toasted Procedure: 1. Using blender, puree chicken broth, garlic, hoisin sauce, ginger, soy sauce, honey and pepper. Transfer to small saucepan and bring to boil. Lower heat and simmer, stirring occasionally, until thickened. Cover and keep warm over low heat. 2. In large pot, add 2-inch deep oil; heat over medium-high heat. Working in 2 batches, fry wings, turning occasionally, until golden brown. Transfer to paper towel to drain out excess oil. 3. Heat oil again. Here's Quickfire recipe -SPICED CHOPSUEY. Ingredients: 2 tbsps oil 150g kilo pork liempo, cubed 1/3 cup water 100g shrimp, peeled and deveined 10 pcs quail eggs, boiled and shelled 1/2 carrot, sliced thinly 1 cup oyster mushroom 5 pcs baby corn, sliced diagonally in half 100g snow peas 1/4 head cabbage Sauce: 1 tsp soy sauce 2 tbsp oyster sauce 1 tsp sesame oil 1 tbsp slurry 1 tsp sugar 1 tsp 5 spice powder Procedure 1. Pan-fry the pork until it is slightly brown. 2. Add 1/2 cup water, cover and bring to a boil, add shrimp. 3. While waiting for the water to boil, prepare the sauce in a bowl by combining the soy sauce, oyster sauce, sesame oil, slurry, 5 spice powder and sugar. Set aside. 4. Ingredients: 100 red lolo roso, rinsed 1 head romaine lettuce, rinsed 2 cups baby spinach, rinsed 1 cup cherry tomatoes 2 tbsp oil 300g tuna loin sashimi grade Salt to taste Freshly cracked pepper to coat tuna Mango dressing: 2 pcs mango (reserve few slices for garnish) 1/3 tsp ginger 1/2 lemon, squeezed 1/2 tsp Sesame oil Splash of Soy sauce 1/2 cup olive oil Procedure: 1. Idol sa Kusina Recipe- Japanese Pasta with Mushrooms and Chicken Soy Sauce and Butter Sauce

Here's Idol sa Kusina Recipe for Episode 41- Japanese Pasta with Mushrooms and Chicken Soy Sauce and Butter Sauce. Ingredients: 3/4 lb dry spaghetti Al Dente 2 garlic cloves, finely chopped 1/4 lb shiitake mushrooms 2 tbsp Japanese soy sauce 3 tbsp butter 2 tbsp neutral oil 2 shallots, finely chopped 500g Chicken slice 1/2 cup pasta water fresh ground black pepper 1 pc. Nori ½ cup white wine/vinegar + 1/4 cup sugar (Mirin) 1 tsp. Chicken powder (Hondashi) Procedure: 1. Fill large pot with salted water and bring to boil. Add spaghetti to pot. 2. In large pan over high heat, add oil, butter and garlic. Cook for 2 mins. 3. Add mushrooms and cook for 3 mins. 4. Add shallots and cook for 2 mins. 5. Add chicken breast slices. 6. While pasta is boiling, reserve about ½ cup of pasta water. Drain pasta and add to pan of cooked mushrooms. Mix well and add soy sauce, sake and mirin. Here's Idol sa Kusina Recipe for Episode 40- BEEF TENDERLOIN TIPS IN POTATO BASKET. Ingredients: 1 tablespoon butter 1 cup finely chopped onion 1/8 teaspoon cayenne pepper Coarse salt 1-1/2 cups chicken broth 1/2 cup heavy cream 1/4 cup finely chopped spring onions 500g beef tenderloin steaks 1-1/2 tablespoons chopped fresh thyme 1 tablespoon (or more) olive oil 6 pcs. Potato Basket crispy Procedure: 1. Melt butter in heavy large saucepan over medium heat. Add onion; cover and cook until soft and translucent, stirring occasionally, about 7 minutes. 2. Sprinkle steaks with coarse salt and pepper and cayenne, then chopped thyme. Heat 1 tablespoon olive oil in heavy large skillet over medium-high heat. Ingredients: Spring rolls: • Rice paper wrappers or lumpia wrappers- 8 rounds • Shrimp - 8 pieces • Sesame oil • Carrot (Julienne) - 1 small • Cucumber (julienne) - ½ piece • Celery leaves - 1 pinch • Scallions - 4 pieces • Avocado - 1 • Fresh mint or fresh basil • 1 liter oil for frying Dipping sauce: • Soy sauce - 1 cup • Fresh mint (chopped) - ½ cup • Chopped garlic - ½ tsp • Lemon juice - ½ • Sesame oil couple of drops • Water - ½ cup Procedure 1. Sauté the shrimp split in half in vegetable oil and sesame oil. 2. Ingredients: 4 large potatoes, peeled and cut into strips 1 cup all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1 teaspoon ground black pepper 1 cup milk 2 pcs. egg 1 quart vegetable oil for frying 500g pounds fillets Fish Directions: 1. Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Here's Idol sa Kusina Recipe for Episode 39- Scallops in Kasubha Cream Sauce. Ingredients: ½ cup dry white wine ½ cup fish stock 1 pinch kasubha (saffron) 500g shelled scallops, large 1 tsp salt and pepper 3 tablespoons olive oil 1 small onion, finely chopped 2 garlic cloves, finely chopped 125 ml cup heavy cream 1 tbsp lemon juice , squeeze 10g chopped flat leaf parsley (to garnish) crusty bread, to serve Procedure: 1.
